Popping chocolate

Serves 10 – 25 min preparation – 1h cooling.

  • Melt 200g of chocolate in a bowl set over a pan of hot water, stirring regularly.
  • Once melted, remove it of the hot water pan and let it cool down for 15 minutes.
  • Add 400g of popping sugar stirring it in order to coat it with chocolate.
  • Spread the mixture on a plate covered with a sheet of baking paper.
  • Let harden in a cool place for at least 1 hour.
  • 200g chocolate (black, milk orwhite chocolate)
  • 40g popping sugar
    • Popping candy

      Sugar comprises a mixture of sucrose, glucose and lactose, wherein the CO2 is trapped.
